This very special chocolate from Maya Mountain Cacao connects small organic farmers in Belize to fine bean-to-bar chocolate makers ensuring a premium market for their meticulously processed cacao beans. Their cacao is an excellent example of the diverse heirloom and trinatario varieties found in this region.
We take this fine cacao and roast, winnow, refine, temper, pour and package our chocolate all by hand in Cobble Hill, BC. This supports our local economy and gives you a divine chocolate bar to enjoy.
Tasting Notes: Sweet raisin with toasted almond and a pineapple-like acidity.
