Fenugreek seeds are powerful, aromatic and bittersweet somewhat like burnt sugar. These amber coloured seeds are used extensively is cooking throughout Asia and are one of the base ingredients in curry powder, especially vindaloo and hot Sri-Lankan curries. Incorporate these seeds into chutneys and hot pickles for a tangy aroma and flavour.

Fenugreek has a slight maple flavour and is often used to flavour artificial maple syrup.
